15 Bean Soup (Quick Style)

Ingredients

  • 1 pkg. assorted beans
  • 2 cans Swanson's Broth (veg or chicken)
  • 2 cans cut up tomatoes
  • 1 onion (optional)
  • 1 clove garlic (or more)
  • 1 fresh lemon
  • 1 bay leaf
  • 1-2 Tbs. Better than Bullion
  • frozen vegetables (parsley, carrots, celery, red pepper)
  • salt and pepper

Method

  1. Quick bean method: wash & put in pot of unsalted water. Bring to boil and boil 2 minutes; cover and let sit 1 hour. Drain.
  2. Add all remaining ingredients except the lemon. Simmer covered for 1–2 hours or until beans are tender. Stir in the juice of the fresh lemon before serving.
  3. Optional: add cooked pasta after soup is done for a heartier soup.
