15 Bean Soup (Quick Style)
Ingredients
- 1 pkg. assorted beans
- 2 cans Swanson's Broth (veg or chicken)
- 2 cans cut up tomatoes
- 1 onion (optional)
- 1 clove garlic (or more)
- 1 fresh lemon
- 1 bay leaf
- 1-2 Tbs. Better than Bullion
- frozen vegetables (parsley, carrots, celery, red pepper)
- salt and pepper
Method
- Quick bean method: wash & put in pot of unsalted water. Bring to boil and boil 2 minutes; cover and let sit 1 hour. Drain.
- Add all remaining ingredients except the lemon. Simmer covered for 1–2 hours or until beans are tender. Stir in the juice of the fresh lemon before serving.
- Optional: add cooked pasta after soup is done for a heartier soup.
