Biscotti Cappuccino

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/3 cups chopped walnuts (optional)
  • 1/4 cups unsweetened cocoa
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp instant coffee granules
  • 2 tsp hot water
  • 1 tsp vanilla
  • 2 eggs (plus 1 egg white)

Method

  1. Combine first 8 ingredients in large bowl.
  2. Combine coffee granules & water in small bowl; stir in vanilla and eggs.
  3. Add to flour mixture, stirring until blended.
  4. Shape into two 10" logs.
  5. Bake at 325° for 30 min, remove & put on wire rack to cool for 10 min.
  6. Cut diagonally into slices and rebake 10 min per side.
