Biscotti Cappuccino
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/3 cups chopped walnuts (optional)
- 1/4 cups unsweetened cocoa
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 tsp instant coffee granules
- 2 tsp hot water
- 1 tsp vanilla
- 2 eggs (plus 1 egg white)
Method
- Combine first 8 ingredients in large bowl.
- Combine coffee granules & water in small bowl; stir in vanilla and eggs.
- Add to flour mixture, stirring until blended.
- Shape into two 10" logs.
- Bake at 325° for 30 min, remove & put on wire rack to cool for 10 min.
- Cut diagonally into slices and rebake 10 min per side.
