Biscotti (Classic)

Ingredients

  • 3 3/4 cups flour
  • 2 cups sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 eggs
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract (optional)
  • 1 2/3 cups almonds

Method

  1. Toast the almonds.
  2. Mix the dry ingredients together.
  3. Mix the eggs and other wet ingredients together, then add to the dry ingredients.
  4. Divide the dough into quarters and roll into logs.
  5. Bake for 35 minutes, then remove from the oven.
  6. Slice on an angle and rebake for 5 to 7 minutes.
