Biscotti (Classic)
Ingredients
- 3 3/4 cups flour
- 2 cups sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs
- 2 egg yolks
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract (optional)
- 1 2/3 cups almonds
Method
- Toast the almonds.
- Mix the dry ingredients together.
- Mix the eggs and other wet ingredients together, then add to the dry ingredients.
- Divide the dough into quarters and roll into logs.
- Bake for 35 minutes, then remove from the oven.
- Slice on an angle and rebake for 5 to 7 minutes.
