Cake — Mom's Melt in Your Mouth Blueberry

Ingredients

  • 3 cups blueberries, lightly floured
  • 1 cup shortening or butter
  • 1 1/2 cups sugar
  • 4 egg yolks
  • 1/2 teaspoon salt
  • 2 teaspoons vanilla
  • 2 teaspoons baking powder
  • 3 cups flour
  • 2/3 cup milk
  • 4 egg whites, beaten stiff with sugar

Method

  1. Cream the butter and sugar.
  2. Add the salt, egg yolks, and vanilla and beat until creamy.
  3. Add alternately the flour (with the baking powder) and the milk with the egg whites, starting with 1/2 cup flour first.
  4. Fold in the blueberries last.
  5. Bake at 350° for 45 minutes (an extra 10 minutes may be necessary).

Tips & Notes

  • Like a light, blueberry pound cake. No frosting needed.
