Cheese Fondue

Ingredients

  • 1 lb. natural Swiss cheese, grated (imported Gruyere is best)
  • Dash of salt
  • 1 clove garlic
  • 2 cups dry white wine (Sauterne)
  • Dash of pepper
  • 1/4 cup cornstarch
  • 2 tablespoons Kirsch (liquor)
  • 1 loaf French bread

Method

  1. Use corning ware or a non-metal pan. Rub the sides and bottom of the pan with garlic. Add the cheese, salt, pepper, wine, and cornstarch.
  2. Heat over a medium flame, stirring constantly, until melted and smooth. Add the Kirsch.
  3. Serve with bread chunks for dipping.
