Chicken à la Orange

Ingredients

  • 2 broiler-fryers, cut up
  • 2 teaspoons salt
  • 1/2 cup flour
  • 1/4 teaspoon pepper
  • 1/3 cup shortening
  • 1 (6-ounce) can frozen orange juice concentrate
  • 1 juice can of water
  • 1/4 cup dark brown sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon nutmeg
  • 1 medium onion

Method

  1. Combine the flour, salt, pepper, oregano, and nutmeg in a bag; add the chicken and toss to coat.
  2. Brown the chicken in the shortening.
  3. Transfer the chicken to a Pyrex casserole and scatter the sliced onion over the top.
  4. Combine the orange juice concentrate, water, and brown sugar; pour over the chicken.
  5. Bake at 350°, basting occasionally, until cooked through and tender.
