Chicken à la Orange
Ingredients
- 2 broiler-fryers, cut up
- 2 teaspoons salt
- 1/2 cup flour
- 1/4 teaspoon pepper
- 1/3 cup shortening
- 1 (6-ounce) can frozen orange juice concentrate
- 1 juice can of water
- 1/4 cup dark brown sugar
- 1 teaspoon oregano
- 1/2 teaspoon nutmeg
- 1 medium onion
Method
- Combine the flour, salt, pepper, oregano, and nutmeg in a bag; add the chicken and toss to coat.
- Brown the chicken in the shortening.
- Transfer the chicken to a Pyrex casserole and scatter the sliced onion over the top.
- Combine the orange juice concentrate, water, and brown sugar; pour over the chicken.
- Bake at 350°, basting occasionally, until cooked through and tender.
