Chicken A La Orange
Ingredients
- 2 broiler-fryers, cut up
- 2 tsp salt
- 1/2 cups flour
- 1/4 tsp pepper
- 1/3 cups shortening
- 1 can frozen orange juice concentrate (6 oz. can)
- 1 juice can water (use the empty OJ concentrate can to measure)
- 1/4 cups dark brown sugar
- 1 tsp oregano
- 1/2 tsp nutmeg
- 1 medium onion
Method
- Combine flour, salt, and pepper in a bag and add chicken pieces to coat.
- Melt shortening in a skillet over medium heat and brown the coated chicken on all sides, then transfer to a Pyrex casserole.
- Slice the onion and scatter over the chicken.
- Pour orange juice concentrate, water, and brown sugar over chicken, and sprinkle with oregano and nutmeg.
- Bake at 350°, basting occasionally, for about 1 hour or until chicken is cooked through.
