Chicken A La Orange

Ingredients

  • 2 broiler-fryers, cut up
  • 2 tsp salt
  • 1/2 cups flour
  • 1/4 tsp pepper
  • 1/3 cups shortening
  • 1 can frozen orange juice concentrate (6 oz. can)
  • 1 juice can water (use the empty OJ concentrate can to measure)
  • 1/4 cups dark brown sugar
  • 1 tsp oregano
  • 1/2 tsp nutmeg
  • 1 medium onion

Method

  1. Combine flour, salt, and pepper in a bag and add chicken pieces to coat.
  2. Melt shortening in a skillet over medium heat and brown the coated chicken on all sides, then transfer to a Pyrex casserole.
  3. Slice the onion and scatter over the chicken.
  4. Pour orange juice concentrate, water, and brown sugar over chicken, and sprinkle with oregano and nutmeg.
  5. Bake at 350°, basting occasionally, for about 1 hour or until chicken is cooked through.
