Chinese Sesame Chicken Salad

Ingredients

Salad

  • Rice noodles
  • Lettuce
  • Cilantro
  • Chicken breast
  • Bacon

Dressing

  • ¼ cup oil
  • 3 tablespoons rice vinegar
  • 2 teaspoons soy sauce
  • 1 tablespoon sesame oil
  • ½ teaspoon dry mustard
  • 2 tablespoons sugar

Method

  1. Cook the chicken breast through, then let it cool and shred or slice it.
  2. Cook the bacon until crisp, drain, and crumble.
  3. Prepare the rice noodles according to package directions (or fry until puffed if using dry rice sticks), and let them cool.
  4. Tear or chop the lettuce and roughly chop the cilantro.
  5. In a small bowl, whisk together the oil, rice vinegar, soy sauce, sesame oil, dry mustard, and sugar until the sugar dissolves and the dressing is well blended.
  6. In a large bowl, combine the rice noodles, lettuce, cilantro, chicken, and bacon.
  7. Pour the dressing over the salad and toss to coat. Serve immediately.
