Chinese Sesame Chicken Salad

Ingredients
Salad
- Rice noodles
- Lettuce
- Cilantro
- Chicken breast
- Bacon
Dressing
- ¼ cup oil
- 3 tablespoons rice vinegar
- 2 teaspoons soy sauce
- 1 tablespoon sesame oil
- ½ teaspoon dry mustard
- 2 tablespoons sugar
Method
- Cook the chicken breast through, then let it cool and shred or slice it.
- Cook the bacon until crisp, drain, and crumble.
- Prepare the rice noodles according to package directions (or fry until puffed if using dry rice sticks), and let them cool.
- Tear or chop the lettuce and roughly chop the cilantro.
- In a small bowl, whisk together the oil, rice vinegar, soy sauce, sesame oil, dry mustard, and sugar until the sugar dissolves and the dressing is well blended.
- In a large bowl, combine the rice noodles, lettuce, cilantro, chicken, and bacon.
- Pour the dressing over the salad and toss to coat. Serve immediately.
