Fred Weil's Famous Brownies

Background

They look underbaked because they're gooey, but that's how they're supposed to be. From Fred Weil. These are Annie's favorites.

Ingredients

  • 1/2 pound butter
  • 4 ounces unsweetened chocolate
  • 4 eggs
  • 2 cups sugar
  • 1/2 cup flour
  • 1 teaspoon vanilla
  • 2/3 cup coarsely chopped walnuts

Method

  1. Preheat the oven to 350°. Grease and flour a 9x12-inch pan.
  2. Melt the butter and chocolate in the top of a double boiler.
  3. When melted, set aside and cool to room temperature.
  4. Meanwhile, beat the eggs and sugar until thick and lemon-colored; add the vanilla.
  5. Fold the chocolate mixture into the eggs and sugar and mix thoroughly.
  6. Sift the flour and fold gently into the batter, mixing until blended.
  7. Fold in the walnuts.
  8. Pour into the pan.
  9. Bake 25 minutes or until the center is set.
  10. Let the brownies cool in the pan 30 minutes before cutting (they are gooey at first but change texture when cool).
