Garlic & Parmesan Potatoes

Ingredients

  • 12 oz new potatoes
  • 1 Tbs. + 1 tsp. tbsp+tsp margarine (1 tablespoon plus 1 teaspoon)
  • 2 tsp vegetable oil
  • 1 clove garlic (minced)
  • 1 slice bacon (crisp)
  • 2 tsp plain dried bread crumbs
  • 1 tsp parsley (chopped)
  • 1 tsp parmesan cheese
  • 1/8 tsp salt
  • paprika (to taste)
  • pepper (dash)

Method

  1. Preheat oven to 425°.
  2. Using veg. peeler, remove & discard a strip of skin around each potato; set potatoes aside.
  3. In medium saucepan, heat margarine and oil over medium heat. Add garlic; cook until tender. Remove from heat.
  4. Add potatoes to garlic mixture; toss to coat. Transfer to 9" round baking pan. Crumble the bacon and sprinkle over potatoes along with the bread crumbs, parsley, parmesan, salt, paprika, and a dash of pepper.
  5. Bake 30–35 minutes or until fork-tender.
