Garlic & Parmesan Potatoes

Ingredients
- 12 oz new potatoes
- 1 Tbs. + 1 tsp. tbsp+tsp margarine (1 tablespoon plus 1 teaspoon)
- 2 tsp vegetable oil
- 1 clove garlic (minced)
- 1 slice bacon (crisp)
- 2 tsp plain dried bread crumbs
- 1 tsp parsley (chopped)
- 1 tsp parmesan cheese
- 1/8 tsp salt
- paprika (to taste)
- pepper (dash)
Method
- Preheat oven to 425°.
- Using veg. peeler, remove & discard a strip of skin around each potato; set potatoes aside.
- In medium saucepan, heat margarine and oil over medium heat. Add garlic; cook until tender. Remove from heat.
- Add potatoes to garlic mixture; toss to coat. Transfer to 9" round baking pan. Crumble the bacon and sprinkle over potatoes along with the bread crumbs, parsley, parmesan, salt, paprika, and a dash of pepper.
- Bake 30–35 minutes or until fork-tender.
