Latkes
Ingredients
- 4 large potatoes
- 2 eggs
- 1 teaspoon salt
- Dash pepper
- 3 tablespoons flour
- 1 teaspoon grated onion
- 1/2 teaspoon baking powder
- Dash cinnamon
Method
- Peel and grate the potatoes, then squeeze them well to remove excess liquid.
- Beat the eggs in a large bowl.
- Add the grated potatoes, grated onion, flour, salt, pepper, baking powder, and cinnamon to the eggs, and mix to form a batter.
- Heat a skillet over medium heat. Drop spoonfuls of batter into the pan, flatten slightly, and cook until golden brown on both sides, working in batches.
- Drain on paper towels and serve hot.
