Libby's Pumpkin Pie

Ingredients

  • 1 unbaked pie shell
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 eggs
  • 1 can (15 ounces) Libby's pure pumpkin
  • 1 1/2 cups evaporated milk (12 ounce can)

Method

  1. Combine sugar, salt, cinnamon, ginger, and cloves in a small bowl.
  2. Beat eggs lightly in a large bowl.
  3. Stir in pumpkin and the sugar-spice mixture.
  4. Gradually stir in the evaporated milk, then pour the filling into the pie shell.
  5. Bake in a 425° oven for 15 minutes.
  6. Reduce temperature to 350° and bake 40–50 minutes more, or until an inserted knife comes out clean.
  7. Cool on a wire rack for 2 hours.
