Libby's Pumpkin Pie

Ingredients
- 1 unbaked pie shell
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 2 eggs
- 1 can (15 ounces) Libby's pure pumpkin
- 1 1/2 cups evaporated milk (12 ounce can)
Method
- Combine sugar, salt, cinnamon, ginger, and cloves in a small bowl.
- Beat eggs lightly in a large bowl.
- Stir in pumpkin and the sugar-spice mixture.
- Gradually stir in the evaporated milk, then pour the filling into the pie shell.
- Bake in a 425° oven for 15 minutes.
- Reduce temperature to 350° and bake 40–50 minutes more, or until an inserted knife comes out clean.
- Cool on a wire rack for 2 hours.
