Mom's Melt in Your Mouth Blueberry Cake

Ingredients
- 3 cups blueberries (lightly floured)
- 1 cup shortening or butter
- 1.5 cups sugar
- 4 egg yolks
- 0.5 tsp salt
- 2 tsp vanilla
- 2 tsp baking powder
- 3 cups flour
- 2/3 cups milk
- 4 egg whites (beaten stiff with sugar)
Method
- Cream butter and sugar. Add salt, egg yolks, and vanilla; beat until creamy. Sift flour with baking powder. Add the flour mixture alternately with the milk to the creamed mixture (starting with about 1/2 cup of the flour mixture). Gently fold in the stiffly beaten egg whites (beaten with a little of the sugar).
- Fold in blueberries last.
- Bake at 350° for 45 minutes (extra 10 minutes may be necessary).
Tips & Notes
- Like a light, blueberry pound cake. No frosting needed.
