Mom's Melt in Your Mouth Blueberry Cake

Ingredients

  • 3 cups blueberries (lightly floured)
  • 1 cup shortening or butter
  • 1.5 cups sugar
  • 4 egg yolks
  • 0.5 tsp salt
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 3 cups flour
  • 2/3 cups milk
  • 4 egg whites (beaten stiff with sugar)

Method

  1. Cream butter and sugar. Add salt, egg yolks, and vanilla; beat until creamy. Sift flour with baking powder. Add the flour mixture alternately with the milk to the creamed mixture (starting with about 1/2 cup of the flour mixture). Gently fold in the stiffly beaten egg whites (beaten with a little of the sugar).
  2. Fold in blueberries last.
  3. Bake at 350° for 45 minutes (extra 10 minutes may be necessary).

Tips & Notes

  • Like a light, blueberry pound cake. No frosting needed.
