Passover Chocolate Chip Meringues

Ingredients
- 2 egg whites
- 1/8 teaspoon salt
- 3/4 cup white sugar
- 1 cup mini semi-sweet chocolate chips
- 1 teaspoon vanilla extract
Method
- Preheat oven to 350°F (175°C). Line 2 cookie sheets with aluminum foil.
- Beat egg whites and salt in a medium bowl until stiff peaks form. Gradually blend in sugar and vanilla. Fold in chocolate chips.
- Drop by teaspoon onto prepared cookie sheets.
- Place in oven and immediately turn off oven. Leave overnight or at least 8 hours without opening the door.
