Passover Chocolate Chip Meringues

Ingredients

  • 2 egg whites
  • 1/2 teaspoon salt
  • 3/4 cup white sugar
  • 1 cup mini semi-sweet chocolate chips
  • 1 teaspoon vanilla extract

Method

  1. Preheat oven to 350°F (175°C). Line 2 cookie sheets with aluminum foil.
  2. Beat egg whites and salt in a medium bowl until stiff peaks form.
  3. Gradually blend in sugar and vanilla.
  4. Fold in chocolate chips.
  5. Drop by teaspoon onto prepared cookie sheets.
  6. Place in oven and immediately turn off the oven. Leave overnight or at least 8 hours without opening the door.

  • Easy to make and easy to eat! Light chocolate studded bites of crisp meringue.
