Garlic & Parmesan Potatoes

Ingredients
- 12 ounces new potatoes
- 1 tablespoon plus 1 teaspoon margarine
- 2 teaspoons vegetable oil
- 1 clove garlic, minced
- 1 slice bacon, cooked crisp
- 2 teaspoons plain dried bread crumbs
- 1 teaspoon chopped parsley
- 1 teaspoon parmesan cheese
- 1/8 teaspoon salt
- Paprika, to taste
- Dash of pepper
Method
- Preheat the oven to 425°.
- Using a vegetable peeler, remove and discard a strip of skin around each potato; set the potatoes aside.
- In a medium saucepan, heat the margarine and oil over medium heat. Add the garlic and cook until tender. Remove from heat.
- Add the potatoes to the garlic mixture and toss to coat. Transfer to a 9-inch round baking pan.
- Crumble the bacon and combine with the bread crumbs, parsley, parmesan, salt, pepper, and a sprinkle of paprika. Sprinkle over the potatoes before baking.
- Bake 30–35 minutes or until fork-tender.
