Garlic & Parmesan Potatoes

Ingredients

  • 12 ounces new potatoes
  • 1 tablespoon plus 1 teaspoon margarine
  • 2 teaspoons vegetable oil
  • 1 clove garlic, minced
  • 1 slice bacon, cooked crisp
  • 2 teaspoons plain dried bread crumbs
  • 1 teaspoon chopped parsley
  • 1 teaspoon parmesan cheese
  • 1/8 teaspoon salt
  • Paprika, to taste
  • Dash of pepper

Method

  1. Preheat the oven to 425°.
  2. Using a vegetable peeler, remove and discard a strip of skin around each potato; set the potatoes aside.
  3. In a medium saucepan, heat the margarine and oil over medium heat. Add the garlic and cook until tender. Remove from heat.
  4. Add the potatoes to the garlic mixture and toss to coat. Transfer to a 9-inch round baking pan.
  5. Crumble the bacon and combine with the bread crumbs, parsley, parmesan, salt, pepper, and a sprinkle of paprika. Sprinkle over the potatoes before baking.
  6. Bake 30–35 minutes or until fork-tender.
