Rice & Curry Salad

Ingredients

  • 4 cups cold cooked rice, any kind
  • 2 green peppers, chopped (or 1 red & 1 green)
  • 3 stalks green onions, chopped
  • 1 cup lite mayonnaise
  • 1 tbsp curry powder
  • 4 tbsp chutney (mango is best)
  • garlic powder or salt (to taste)
  • 1/2 cups salted peanuts

Method

  1. Mix mayo, curry, chutney and garlic into dressing.
  2. Add mixed dressing to first three ingredients.
  3. Stir in the salted peanuts just before serving. (Salted peanuts are used because the recipe has no salt; if you prefer, add salt and use unsalted nuts.)
