Rice & Curry Salad
Ingredients
- 4 cups cold cooked rice, any kind
- 2 green peppers, chopped (or 1 red & 1 green)
- 3 stalks green onions, chopped
- 1 cup lite mayonnaise
- 1 tbsp curry powder
- 4 tbsp chutney (mango is best)
- garlic powder or salt (to taste)
- 1/2 cups salted peanuts
Method
- Mix mayo, curry, chutney and garlic into dressing.
- Add mixed dressing to first three ingredients.
- Stir in the salted peanuts just before serving. (Salted peanuts are used because the recipe has no salt; if you prefer, add salt and use unsalted nuts.)
