Rice & Curry Salad

Ingredients

  • 4 cups cold cooked rice, any kind
  • 2 green peppers, chopped (or 1 red & 1 green)
  • 3 stalks green onions, chopped
  • 1 cup lite mayonnaise
  • 1 tablespoon curry powder
  • 4 tablespoons chutney (mango is best)
  • Garlic powder or salt
  • 1/2 cup salted peanuts

Method

  1. Mix the mayonnaise, curry powder, chutney, and garlic powder (or salt) into a dressing.
  2. Add the dressing to the rice, green peppers, and green onions and toss to coat.
  3. Add the salted peanuts and toss to combine.

Tips & Notes

  • Salted peanuts are used because the recipe has no added salt; you can add salt and use unsalted nuts instead.
