Rice & Curry Salad

Ingredients
- 4 cups cold cooked rice, any kind
- 2 green peppers, chopped (or 1 red & 1 green)
- 3 stalks green onions, chopped
- 1 cup lite mayonnaise
- 1 tablespoon curry powder
- 4 tablespoons chutney (mango is best)
- Garlic powder or salt
- 1/2 cup salted peanuts
Method
- Mix the mayonnaise, curry powder, chutney, and garlic powder (or salt) into a dressing.
- Add the dressing to the rice, green peppers, and green onions and toss to coat.
- Add the salted peanuts and toss to combine.
Tips & Notes
- Salted peanuts are used because the recipe has no added salt; you can add salt and use unsalted nuts instead.
