Ingredients

  • 2 packages dry yeast
  • 1 tablespoon sugar
  • 1 cup warm water
  • 1 cup milk
  • 6 tablespoons butter
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 3 eggs, beaten
  • About 7 cups flour, divided (2 cups plus up to 5 more)

Method

  1. Dissolve the yeast and sugar in the warm water and set aside.
  2. Scald the milk (bring it to a rolling boil).
  3. Add the butter, sugar, and salt to the scalded milk, let it cool, and set aside.
  4. Combine 2 cups flour with the milk mixture. Once cooled, add the yeast mixture and the 3 beaten eggs. Slowly add up to 5 more cups flour (7 cups total) to make a soft, non-sticky dough.
  5. Cover and let rise until doubled, then punch down.
  6. Form into rolls and let rise 45–60 minutes.
  7. Bake at 375° for 20 minutes.
