Rolls
Ingredients
- 2 packages dry yeast
- 1 tablespoon sugar
- 1 cup warm water
- 1 cup milk
- 6 tablespoons butter
- 1/2 cup sugar
- 1 teaspoon salt
- 3 eggs, beaten
- About 7 cups flour, divided (2 cups plus up to 5 more)
Method
- Dissolve the yeast and sugar in the warm water and set aside.
- Scald the milk (bring it to a rolling boil).
- Add the butter, sugar, and salt to the scalded milk, let it cool, and set aside.
- Combine 2 cups flour with the milk mixture. Once cooled, add the yeast mixture and the 3 beaten eggs. Slowly add up to 5 more cups flour (7 cups total) to make a soft, non-sticky dough.
- Cover and let rise until doubled, then punch down.
- Form into rolls and let rise 45–60 minutes.
- Bake at 375° for 20 minutes.
