Rosa's Soup

Background

Rosa never measured anything so this is kind of a guess. She always put parmesan on at the end.

Ingredients

  • chicken (in water)
  • onion
  • tomato
  • celery
  • parsley
  • salt
  • bouillon cube
  • pasta
  • parmesan cheese

Method

  1. Combine the chicken, water, onion, tomato, celery, parsley, and salt in a pot and boil 1 1/2 hours.
  2. Remove the chicken and cut into pieces, discarding the skin.
  3. Drain the broth, reserving some aside.
  4. Put all the vegetables in a blender and puree.
  5. Return the puree to the pot and add the bouillon cube.
  6. Simmer 20 minutes.
  7. Shred the chicken.
  8. Cook the pasta in the broth, then add the shredded chicken.

Tips & Notes

  • Parmesan is good in it when done.
