Rosa's Soup
Background
Rosa never measured anything so this is kind of a guess. She always put parmesan on at the end.
Ingredients
- chicken (in water)
- onion
- tomato
- celery
- parsley
- salt
- bouillon cube
- pasta
- parmesan cheese
Method
- Combine the chicken, water, onion, tomato, celery, parsley, and salt in a pot and boil 1 1/2 hours.
- Remove the chicken and cut into pieces, discarding the skin.
- Drain the broth, reserving some aside.
- Put all the vegetables in a blender and puree.
- Return the puree to the pot and add the bouillon cube.
- Simmer 20 minutes.
- Shred the chicken.
- Cook the pasta in the broth, then add the shredded chicken.
Tips & Notes
- Parmesan is good in it when done.
