Soup — 15 Bean Quick Style

Ingredients

  • 1 package assorted beans
  • 2 cans Swanson's Broth (veg or chicken)
  • 2 cans cut up tomatoes
  • 1 onion (optional)
  • 1 clove of garlic, or more
  • 1 fresh lemon
  • 1 bay leaf
  • 1–2 tablespoons Better than Bullion
  • Frozen vegetables (parsley, carrots, celery, red pepper)
  • Salt & pepper

Method

  1. Quick bean method: wash beans and put in a pot of unsalted water. Bring to a boil and boil for 2 minutes; cover and let sit for 1 hour. Drain.
  2. Add all remaining ingredients. Simmer covered for 1–2 hours or until beans are tender.
  3. Add pasta after the soup is done.
