Soup — 15 Bean Quick Style
Ingredients
- 1 package assorted beans
- 2 cans Swanson's Broth (veg or chicken)
- 2 cans cut up tomatoes
- 1 onion (optional)
- 1 clove of garlic, or more
- 1 fresh lemon
- 1 bay leaf
- 1–2 tablespoons Better than Bullion
- Frozen vegetables (parsley, carrots, celery, red pepper)
- Salt & pepper
Method
- Quick bean method: wash beans and put in a pot of unsalted water. Bring to a boil and boil for 2 minutes; cover and let sit for 1 hour. Drain.
- Add all remaining ingredients. Simmer covered for 1–2 hours or until beans are tender.
- Add pasta after the soup is done.
