Spinach & Cheese Casserole

Ingredients

  • 2 bags spinach, torn up
  • 4 cups nonfat cottage cheese
  • 4 cups cheddarella cheese, grated
  • salt, pepper, dill, and parsley (to taste)
  • 2 cups mushrooms, cut up
  • 1/4 cups onion, finely cut (optional)
  • 1 cup celery, chopped
  • 2 medium tomatoes, cut up
  • 2+ garlic cloves, minced (2 or more)

Method

  1. Grease a pan, Pyrex bowl, or large casserole dish. Combine spinach, cottage cheese, cheddarella, mushrooms, onion, celery, tomatoes, and garlic in the dish; season with salt, pepper, dill, and parsley.
  2. Bake uncovered at 350° for 45 minutes.
  3. When partially cooked, poke spinach down to cover with cheese and so top does not burn.
