Spinach & Cheese Casserole

Ingredients
- 2 bags spinach, torn up
- 4 cups nonfat cottage cheese
- 4 cups cheddarella cheese, grated
- salt, pepper, dill, and parsley (to taste)
- 2 cups mushrooms, cut up
- 1/4 cups onion, finely cut (optional)
- 1 cup celery, chopped
- 2 medium tomatoes, cut up
- 2+ garlic cloves, minced (2 or more)
Method
- Grease a pan, Pyrex bowl, or large casserole dish. Combine spinach, cottage cheese, cheddarella, mushrooms, onion, celery, tomatoes, and garlic in the dish; season with salt, pepper, dill, and parsley.
- Bake uncovered at 350° for 45 minutes.
- When partially cooked, poke spinach down to cover with cheese and so top does not burn.
