Spinach & Cheese Casserole

Ingredients

  • 2 bags torn up spinach
  • 4 cups nonfat cottage cheese
  • 4 cups grated cheddarella cheese
  • Salt, pepper, dill, parsley to taste
  • 2 cups cut up mushrooms
  • 1/4 cup finely cut onion (optional)
  • 1 cup chopped celery
  • 2 medium tomatoes, cut up
  • 2 or more minced garlic cloves

Method

  1. Grease a pan, Pyrex bowl, or large cooking bowl.
  2. Place all ingredients in the prepared dish.
  3. Bake uncovered at 350° for 45 minutes.
  4. When partially cooked, poke the spinach down to cover with cheese so the top does not burn.
