Spinach & Cheese Casserole

Ingredients
- 2 bags torn up spinach
- 4 cups nonfat cottage cheese
- 4 cups grated cheddarella cheese
- Salt, pepper, dill, parsley to taste
- 2 cups cut up mushrooms
- 1/4 cup finely cut onion (optional)
- 1 cup chopped celery
- 2 medium tomatoes, cut up
- 2 or more minced garlic cloves
Method
- Grease a pan, Pyrex bowl, or large cooking bowl.
- Place all ingredients in the prepared dish.
- Bake uncovered at 350° for 45 minutes.
- When partially cooked, poke the spinach down to cover with cheese so the top does not burn.
