Starbucks Lemon Loaf (Copycat)
Ingredients
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 3 eggs
- 1 cup sugar
- 2 tbsp butter (softened)
- 1 tsp vanilla
- 1 tsp lemon extract
- 1/3 cups lemon juice
- 1/2 cups oil
lemon icing
- 1 cup powdered sugar (combined with lemon juice for icing)
- lemon juice (add to powdered sugar until pourable consistency)
Method
- Preheat oven to 350°. Grease and flour a 9x5 loaf pan.
- Mix all wet ingredients. Combine dry ingredients separately. Mix together until blended.
- Pour into pan. Bake 45-55 minutes or until toothpick comes out clean.
- Mix icing and pour over cooled loaf.
