Starbucks Lemon Loaf (Copycat)
Ingredients
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1 cup sugar
- 2 tablespoons butter, softened
- 1 teaspoon vanilla
- 1 teaspoon lemon extract
- 1/3 cup lemon juice
- 1/2 cup oil
Lemon icing
- 1 cup powdered sugar
- Lemon juice
Method
- Preheat oven to 350°. Grease and flour a 9x5 loaf pan.
- Mix all wet ingredients.
- Combine dry ingredients separately.
- Mix the wet and dry together until blended.
- Pour into the prepared pan and bake 45–55 minutes, or until a toothpick comes out clean.
- Mix the icing (powdered sugar with lemon juice) and pour over the cooled loaf.
