Starbucks Lemon Loaf (Copycat)

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla
  • 1 teaspoon lemon extract
  • 1/3 cup lemon juice
  • 1/2 cup oil

Lemon icing

  • 1 cup powdered sugar
  • Lemon juice

Method

  1. Preheat oven to 350°. Grease and flour a 9x5 loaf pan.
  2. Mix all wet ingredients.
  3. Combine dry ingredients separately.
  4. Mix the wet and dry together until blended.
  5. Pour into the prepared pan and bake 45–55 minutes, or until a toothpick comes out clean.
  6. Mix the icing (powdered sugar with lemon juice) and pour over the cooled loaf.
