Strawberry Meringue Forgotten Cake

Ingredients

  • 5 egg whites
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cream of tartar
  • 1 1/2 cups sugar
  • Whipping cream
  • Fresh strawberries (sweetened)

Method

  1. Beat egg whites, cream of tartar, and salt until it holds a peak.
  2. Add sugar gradually, then beat in vanilla.
  3. Grease and flour a 9" round cake pan (best to use PAM).
  4. Pour in meringue.
  5. Preheat oven to 450°. Put meringue in oven and turn it off. Leave in oven overnight without opening the oven.
  6. To serve: whip cream, spread on meringue and put in refrigerator for 3–4 hours. Then top with sweetened fresh strawberries (or blueberries or raspberries).

Tips & Notes

  • Unusually great tasting and makes a beautiful presentation.
  • For a bigger amount, use a 9x13 pyrex dish and double recipe.
