Strawberry Meringue Forgotten Cake
Ingredients
- 5 egg whites
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 1/2 teaspoon cream of tartar
- 1 1/2 cups sugar
- Whipping cream
- Fresh strawberries (sweetened)
Method
- Beat egg whites, cream of tartar, and salt until it holds a peak.
- Add sugar gradually, then beat in vanilla.
- Grease and flour a 9" round cake pan (best to use PAM).
- Pour in meringue.
- Preheat oven to 450°. Put meringue in oven and turn it off. Leave in oven overnight without opening the oven.
- To serve: whip cream, spread on meringue and put in refrigerator for 3–4 hours. Then top with sweetened fresh strawberries (or blueberries or raspberries).
Tips & Notes
- Unusually great tasting and makes a beautiful presentation.
- For a bigger amount, use a 9x13 pyrex dish and double recipe.
