Zucchini Pasta Sauce

Ingredients

  • Zucchini
  • Lemon
  • Butter and olive oil
  • Onion and garlic
  • Bell peppers
  • Basil and parsley
  • Parmesan
  • Vegetable broth
  • Tomatoes, chopped

Method

  1. Shred zucchini in Cuisinart and simmer in vegetable broth and fresh squeezed lemon juice.
  2. Using 1/2 butter and 1/2 olive oil, saute garlic, onions and roasted sweet bell peppers until brown.
  3. Add chopped tomatoes, basil, and parsley and simmer.
  4. Combine with zucchini. Serve over pasta with parmesan.
