Zucchini Pasta Sauce

Ingredients
- Zucchini
- Lemon
- Butter and olive oil
- Onion and garlic
- Bell peppers
- Basil and parsley
- Parmesan
- Vegetable broth
- Tomatoes, chopped
Method
- Shred zucchini in Cuisinart and simmer in vegetable broth and fresh squeezed lemon juice.
- Using 1/2 butter and 1/2 olive oil, saute garlic, onions and roasted sweet bell peppers until brown.
- Add chopped tomatoes, basil, and parsley and simmer.
- Combine with zucchini. Serve over pasta with parmesan.
