Zucchini Pasta Sauce
Ingredients
- zucchini (shredded)
- lemon (fresh squeezed juice)
- butter and olive oil (equal parts, 1/2 and 1/2)
- onion and garlic
- bell peppers (roasted sweet bell peppers)
- basil and parsley (chopped)
- parmesan cheese
- organic vegetable broth
Method
- Shred zucchini in Cuisinart and simmer in organic vegetable broth and fresh squeezed lemon juice.
- Using equal parts butter and olive oil, saute garlic, onions, and roasted sweet bell peppers until brown. Stir in basil and parsley.
- Add chopped tomatoes and simmer.
- Combine with zucchini.
- Serve over pasta with parmesan.
