Zucchini Pasta Sauce

Ingredients

  • zucchini (shredded)
  • lemon (fresh squeezed juice)
  • butter and olive oil (equal parts, 1/2 and 1/2)
  • onion and garlic
  • bell peppers (roasted sweet bell peppers)
  • basil and parsley (chopped)
  • parmesan cheese
  • organic vegetable broth

Method

  1. Shred zucchini in Cuisinart and simmer in organic vegetable broth and fresh squeezed lemon juice.
  2. Using equal parts butter and olive oil, saute garlic, onions, and roasted sweet bell peppers until brown. Stir in basil and parsley.
  3. Add chopped tomatoes and simmer.
  4. Combine with zucchini.
  5. Serve over pasta with parmesan.
