Zucchini Pasta Sauce

Ingredients
- Zucchini
- Lemon
- Butter and olive oil
- Onion and garlic
- Bell peppers
- Tomatoes, chopped
- Basil and parsley
- Parmesan
- Vegetable broth
Method
- Shred the zucchini in a Cuisinart and simmer in organic vegetable broth and fresh squeezed lemon juice.
- Using half butter and half olive oil, sauté the garlic, onions, and roasted sweet bell peppers until brown.
- Add the chopped tomatoes and simmer.
- Combine with the zucchini and stir in the basil and parsley.
- Serve over pasta with parmesan.
