Zucchini Pasta Sauce

Ingredients

  • Zucchini
  • Lemon
  • Butter and olive oil
  • Onion and garlic
  • Bell peppers
  • Tomatoes, chopped
  • Basil and parsley
  • Parmesan
  • Vegetable broth

Method

  1. Shred the zucchini in a Cuisinart and simmer in organic vegetable broth and fresh squeezed lemon juice.
  2. Using half butter and half olive oil, sauté the garlic, onions, and roasted sweet bell peppers until brown.
  3. Add the chopped tomatoes and simmer.
  4. Combine with the zucchini and stir in the basil and parsley.
  5. Serve over pasta with parmesan.
